Fluffy Apple Cinnamon Oat Cake

Ingredients
- •80 g rolled oats
- •110 g apple, sliced
- •2 eggs
- •1 tsp cinnamon
- •Optional: chopped walnuts, extra apple slices or a sprinkle of cinnamon
How to make it
Preheat the oven to 175°C. Blend the rolled oats into a fine oat flour. Add the sliced apple, eggs and cinnamon, then blend until smooth and creamy. Pour the mixture into a small lined or lightly greased cake tin. Bake for 30–35 minutes, until cooked through and beautifully fluffy. Let it cool slightly before slicing.

Warm Blueberry & Banana (Breakfast) Cake

Ingredients
- •2 ripe bananas — about 230 g peeled
- •225 g blueberries
- •80 g rolled oats (or 50% oats + 50% buckwheat flakes)
- •30 g walnuts or pecans, roughly chopped
- •240 ml milk of your choice
- •1 large egg
- •60–85 g honey or pure maple syrup
- •¾ tsp cinnamon
- •½ tsp baking powder
- •1 tsp vanilla extract
- •Small pinch of salt
How to make it
Preheat the oven to 190°C and lightly grease a 20 × 20 cm baking dish. Slice the bananas and spread them across the bottom. Scatter half the blueberries over them, sprinkle with a little cinnamon and drizzle with some honey. Cover and bake for 15 minutes. Meanwhile, mix the oats, baking powder, remaining cinnamon, salt and half the nuts. Whisk together the milk, egg, vanilla and remaining honey. Remove the fruit from the oven, spoon the oat mixture on top, pour over the milk mixture and press the oats down gently. Finish with the remaining blueberries and nuts, then bake uncovered for 25–30 minutes until set and golden. Rest for a few minutes before cutting into 6 portions.
