Lemon-Tahini Chicken with Crispy Chickpeas

Ingredients

  • 120–150 g chicken breast or chicken thigh
  • ½ cup cooked chickpeas
  • 1 small courgette, sliced
  • Handful of spinach
  • ½ red onion, sliced
  • 1 tbsp extra virgin olive oil
  • Paprika, cumin, pepper and a little sea salt
  • For the tahini sauce: 1 tbsp tahini
  • Juice of ½ lemon
  • 1 tbsp Greek yogurt
  • Splash of water
  • Fresh parsley

How to make it

Season the chicken and chickpeas with paprika, cumin and pepper. Cook them in a pan with olive oil until the chicken is golden and the chickpeas are slightly crispy. Add the courgette and red onion, then stir in the spinach at the end. Mix the tahini, Greek yogurt and lemon juice and drizzle over the top. Serve as it is or with a small portion of quinoa or wholegrain couscous if you need some extra energy.

One-Tray Mediterranean Salmon & Vegetable Bake

Ingredients

  • 120–150 g salmon fillet
  • 1 small sweet potato, cut into cubes
  • Courgette
  • Cherry tomatoes
  • Red bell pepper
  • Red onion
  • Handful of broccoli
  • 1 tbsp extra virgin olive oil
  • Lemon
  • Garlic
  • Oregano or Italian herbs
  • Optional: a few olives

How to make it

Preheat the oven to 200°C. Place the sweet potato and vegetables in an oven dish, drizzle with olive oil and season with garlic and herbs. Bake for about 15 minutes. Add the salmon to the same dish, squeeze some lemon over everything and bake for another 12–15 minutes, until the salmon is cooked. Finish with fresh parsley, lemon zest or a spoonful of Greek yogurt with herbs.

Why we love it: Salmon is rich in protein and omega-3 fatty acids, while the colourful vegetables provide fibre, antioxidants and a variety of micronutrients. Sweet potato adds nourishing carbohydrates without making the meal feel heavy.
